Post work-out cacao snacks

OK, I have to admit... I am addicted to the taste of cacao... What do you want.. Although I am an expat, I profoundly feel a Belgian in my heart. So I love to try out any kind of recipes with raw cacao... But these energy balls are just so perfect... They satisfy, they taste AMAZING and they don't make your blood sugar levels spike. The cacao also boots you with magnesium

The topping with the cacao nibs is just my favourite! The combination of the soft chocolate inside with the crunchy topping makes it so divine good! Whenever you crave something sweet, this is the snack to go for! It's pure nourishment from within ...

Store some in the fridge and the left over you can keep in the freezer for up to 2 months. You will always find any kind of cacao energy balls in my freezer as it keeps me going whenever I crave something sweet (which is quiet often...:). Usually I make a bunch of them as every family member sneakes some out when they pass by the freezer.

Ingredients : 

- 1 mug of walnuts

- 1/2 mug of dates

- 2 tbsp cacao

- 2 tbsp coconut oil

- 2 tbsp hemp seeds

For the topping: 1/4 cup of sesame seeds - 1/4 cup of goji berries - 1/4 cup of cacao nibs

 

Put the nuts in the food processor and mix until they are finely broken down. Add the dates and mix again. And add all the other ingredients and mix again. Make small balls with your hands. 

Bring the topping ingredients in 3 different bowls and roll 1/3 of the balls in each topping. 

Enjoy the beauty of all these colours and textures...
