Baked sweet potato

A wonderful lunch idea to keep you grounded 🙌🏻root vegetables are great to keep you rooted, feeling safe and stabilized as they grow underground🍠

RECIPE📔
🍃1 sweet potato

🍃1 cup cooked chickpeas

🍃olive oil

🍃cumin

🍃guacamole: 1 avocado mashed with some cherry tomatoes, 1/2cup black beans (or remove them if you don’t like black beans), half lime juice, garlic, salt and pepper,1 tbsp olive oil

PREPARATION:

🍠cut the sweet potato in half and put in an oven tray - drizzle w olive oil and salt and pepper

🍃put the chickpeas in same oven tray (less dishes😜)drizzle w olive oil, cumin and salt.
Let it bake for 30 min on 200 degrees Celcius - chickpeas need to be crunchy and sweet potato soft

🍃Mash the ingredients for the guacamole together🥑decorate your sweet potato with guacamole, roasted chickpeas and some greens on top👌🏻
